''Pyzy'' traditional Polish steamed dumplings from Wielkopolska region

Pyzy are traditional dumplings from Wielkopolska (central-western region of Poland )
On different part of Poland and also Belarus, Lithuania, Ukraine and Russian you can find on the same name for different kind of dumplings, but that receipt is knowing just in Wielkopolska region and that dumplings are very soft and puffy.  


Ingredients:
400g white flour
250ml water
2eggs
20g yeast
2,5 butter
½ tablespoon sugar
1 tablespoon salt
line cloth

Method:
1.       Mix 50ml warm water with yeast, sugar and 1 tablespoon of flour. Leave that mix in a warm place to rise for around 30 minutes .
2.       Rest of flour mix with rest of warm water and add eggs and salt. Mix that with mix which you done before with yeast. Mix that with a wooden serving spoon till there are air bubbles show (that is very important to make nice soft and puffy dumplings.
3.       In microwave melted butter and add to the mix. Leave the pastry to rise again. If you think pastry is to thick or to hard add some water and mix again
4.       In deep large pot boil some water (less then half of your pot. Cover pot with clean line cloth and bind it around that pot.
5.       Forming  from that pastry mix small balls (diameter one ball should be around 5cm) and place on the cloth. Cover the balls on the pot with lid or a bowl. Balls shouldn’t to touch water, you only stem dumplings
6.       Boil for around 20 minutes. The water should go on boiling for all time
Serve hot with meat and with thick gravy sauce.
In that region of Poland traditional dinner is roast duck with them dumplings and greeted beetroot
